PEPPERMINT CREAMS


My mum is a terrific cook and when I was young, I used to watch her every move in the kitchen. She would always try to involve my brothers and I in everything she did but would also encourage us to make things on our own. One of the easiest sweets to make is the classic peppermint cream. I have very fond memories of making these as a child as it was something I didn’t need any help with.
Ingredients
300g/10oz icing sugar
125g/5oz condensed milk
1/4 of a teaspoon of peppermint extract
200g/7oz dark chocolate
Method
Add the icing sugar, condensed milk and peppermint extract to a mixing bowl.

Mix all the ingredients together and forms a ball.

Place the dough onto a floured work surface and roll out until the dough is approximately 3-5mm thick.

Using a pastry cutter, cut discs of peppermint creams until all the dough is used.

Place the discs onto a parchment lined baking tray to set.

Melt the dark chocolate in a mixing bowl over a pan of boiling water, then dip each peppermint cream halfway into the chocolate and place back on the baking tray to allow the chocolate to set.

These little sweet treats make are a great after dinner nibble.
Alternatively you can use orange flavouring to make orange creams.
